Katelee is 10 today! How did that happen?? It really doesn't seem like it's been 10 years since I became a mom for the first time. I'm certainly not old enough to have a 10-year-old. ;c)
My awesome girl loves pie. Every year for her birthday, she requests a birthday pie instead of a cake. One year it was apple, one year peach and last year I think it was pumpkin. Her favorite pies ever are pumpkin and lemon meringue. This year she wanted to take a treat to school, but pies aren't easily taken and shared in class. She suggested I make mini-pies like I did a month or so ago when I made 100 tiny pies. I didn't want to have that much work to do, so we came up with a compromise -- pumpkin cupcakes. All the goodness that is pumpkin pie, but in a delicious and easy-to-eat form.
I baked the cupcakes last night, decorated them this morning and we now have 24 yummy pumpkin cupcakes with maple cream cheese icing ready to head to school.
Happy Birthday, Katelee!
