A little Christmas fun

We made gingerbread houses... sort of. I had wanted to make the gingerbread, but we ran out of time after a full day of Christmas shopping, so we used graham crackers. It ended up working well and everyone had a great time. When this many people make "gingerbread" houses, you end up with a village. ;c)

Here's our little town:

And from the back:

Katelee made the manger at church during Young Women's this past week. She made Santa and his sleigh with us:

Santa even has a beard, a sack of toys and two tiny reindeer(that look slightly like caterpillars, which we had a good laugh over):

Grace made a house that Katelee decided looked like it came from a Dr. Seuss book. It had a North Pole sign on top, a licorice mailbox in front, and a big, orange doorknob:

Sheri made a house with a small guest house. She left off the roof because she decorated the inside walls and put a person in one:

Spencer made a cute little house with a guy building a snowman outside and a chimney on the roof:

Elijah made his creation which Katelee decided was a sandwich, so she added a little "cherry" on a toothpick as a sandwich decoration:

Kirk made a lake house complete with fishermen, fishing poles, boats and fish. It's been cold here. I wonder what he's dreaming of?

Here is my little house:

My favorite detail is the little snowman made with icing. He's a cute little guy!

Of course the best part is getting to eat the creations. They are now mostly gone. :cD I love Christmas and can't wait to do more fun things with the family!

Twelve!

My first baby, the one that made me a mommy, is twelve today! It's hard to believe it's been that long.

The slideshow won't work for some reason, so here are all the pictures...

Happy Birthday, sweet Katelee!!!

Homemade Gnocchi

Yesterday was rainy and chilly, which is the perfect weather for making soup. I couldn't decide which soup I wanted to make, so I made two kinds. Thank goodness the missionaries were coming to dinner to help us eat it!

I made Chicken and Gnocchi Soup, which I have posted the recipe to before, and Sausage and Potato Soup, which I should post the recipe to soon. Both are imitations of Olive Garden soups and both are delicious.

I used to buy pre-packaged gnocchi from the store, but never will again. It is so easy to make gnocchi and it tastes much better than the store-bought variety. Let me show you how easy it is!

First, wash and boil whole potatoes. (I'll put the recipe at the end.)
When they are done(about 20 minutes or so, but depends on the size), peel the potatoes. You'll want a sharp paring knife and a dish towel(since they'll be hot). They should peel easily.

Run the potatoes through a food mill, ricer, grate them, or mash them with a potato masher(this works ok, but not as well as one of the other options as they will incorporate more air into the potatoes making the gnocchi fluffier).

Slightly beat one egg, then add it to the potatoes, stirring quickly to keep the egg from cooking from the heat. Mix in salt & pepper and part of a cup of flour until it starts to all stick together, then sprinkle the rest of the flour on the counter, dump the potatoes onto it and knead it into a dough. You may need a little more flour, but don't use too much.

Cut the ball into 4ths(and maybe even 8ths), then roll each section into a "rope" that is about 3/4 inch in diameter. This is where all those years making play-dough snakes comes in handy. ;c) Cut it into pieces of about 1 inch.

Now, you can either cook them as they are and have them be little "pillows" or you can shape them. To shape them, press one section against the back of a fork. You might need to dip the fork in flour first to keep it form sticking. Maybe your fingers, too.

Then pull back on the gnocchi, rolling it back on itself. I wouldn't normally do this with one hand, but I had to take the picture with the other hand. You could also just press them into the fork to mark one side with the tines and not roll it back. Basically, shape them how they look most appetizing to you! ;c)

The first couple might seem time consuming, but you really get going once you get the hang of it and as long as you don't expect them to be perfect.

Drop them into a pot of boiling, salted water and cook. They will sink when you first put them in and float when they are done(about 2 minutes or so).

Scoop them out with a slotted spoon or sieve. That's it! You have gnocchi! You can toss them with olive oil(or butter), sprinkle with herbs and eat as they are or use them in a recipe. (You can see the last few of them I didn't shape, but just left as "pillows".)

Yummy!!

Potato Gnocchi

About 2 pounds of potatoes: Russet will do, King Edward are best if you can find them, the Yukon gold and red are too waxy to use.
1 egg, lightly beaten: These can also be made without the egg, but I would advise against trying that until you've made them a few times. The egg is what helps hold them together.
1 cup of flour: fine flour works best, but you can use all-purpose. You might end up needing more. Don't use too much, though, or the gnocchi will be too dense. You want the dough moist, but not sticky.
salt & pepper to taste

Favorite time of the year!

I love fall!!

I just wish the weather would get the note that it doesn't need to get into the 90's anymore. It's time for cool, crisp fall weather where you can open your windows wide and feel the breeze.

Em-brace-able you!

This morning Katelee went to the orthodontist looking like this...

And she came home looking like this...

I got her to smile so big by telling her to say "Brace Face!" She was almost laughing out loud. :c)

She's growing up so fast!!

Monday?

I'm having such a good day it should be a crime. It's Monday, though, so I'm trying to enjoy the greatness of today without waiting for it to become a Monday at any minute.

We're having gorgeous weather. I love autumn so, so much and it feels like it's almost here!!! It's in the high 70's and the humidity went down to 47% from the 88%(LOL) it was this morning. There's a gentle breeze. The air smells fresh and feels amazing. The kids are happy & obedient. Kirk called with time around lunch so we all went to lunch with Daddy. While Elijah napped I set up a "kitchen" area where the kids can pretend to cook in the backyard. They tell me they "mostly make Indian food", as in American Indian. :cD In the past they just made do with whatever they found. I decided it was time they had more to play with, especially after seeing the outdoor play kitchen area on this blog. It was just a couple crates and some pots, but I loved it. :)

I wish every day could be like today.

I already had the top crate from when I sold Pampered Chef in 1998(LOL!!). I got the bottom two from Michael's when I couldn't find any second-hand. I got a couple very beat up pots, some neat wooden plates, a couple baskets and some spoons from the Goodwill for very cheap. I also gave them some wooden spoons I had already. I'll probably add to this from time to time, but for now they love it!

They are already "cooking" something in there. ;c)

Fun!!!

I want to make some chairs like the ones we saw in Ohio. That will be the next step!

Middle of the week... Whee!!

Oh, what a day. Starting your morning by arriving at the dentist office at 8am for a 2 hour sit in the dentist's chair doesn't bode well for the rest of the day. I had a 25+ year old filling go bad, so it needed to be replaced and covered with a crown. That's a new one for me and let me tell you, it's not fun having an old filling drilled out. *shudder* They kept asking if it hurt because I kept wincing. There was no pain(that came later as the numbing wore off, heh), but boy does the sound of the drill go right up my spine! I get to go back in 3 weeks for the permanent crown.

The rest of the day was pretty cruddy. Elijah did something to his foot/pinky toe earlier, so he spent most of the afternoon and evening refusing to walk anywhere. Thankfully he started hobbling around just before dinner and was walking pretty normally by bedtime. Dinner was delicious, even if 3 of the kids didn't think so, including the one who requested it!

I've got the last batch of peaches on the stove bubbling away into jam. Grace and Katelee helped wash them as I cut them up. Elijah even helped! He was handing peaches to Katelee to wash and in between would walk over to me to act as quality control, having many samples to make sure the "peechees" were up to par. These are such juicy peaches. Yuuuummm!

A Bushel and a Peck

The kids and I went with some other homeschool families to a local orchard today to pick apples and peaches. We had a great time!

They took us on a wagon ride out into the orchard where the kids were able to each pick a bag of fruit(mostly apples, a few peaches and a couple pears).

We loaded up with a couple bushels of apples and a bushel of peaches to make lots of yummy things to can for the winter. I'll be busy the rest of this week! Elijah could resist eating the apple he picked right away.

On the way home we saw a tractor trailer that appeared to be on fire! Luckily, the driver had been able to get out and put out the fire. There was so much smoke!
